this year, diwali falls on november 10th in north & south america, and november 11th everywhere else. to make use of my kitchen aid, i decided to make his cake rather than buy one. of course my nature is to experiment rather than making something i know will work well. it's not the most elegant looking cake there ever was, but it actually turned out delicious! *pats self on back* i mixed two different recipes. the original recipe i found was a chocoholic dream cake (perfect for me.. but not necessarily kiwi's kind of cake). so i searched for a vanilla sponge cake to offset the chocolate'y'ness of it all.<br />

<center><b>ASSEMBLY INSTRUCTIONS</b></center><br />
<i>Day 1:</i><br />
<ul><li>Bake sponge cake (preferably in a springform pan)</li>
<li>Prepare chocolate mousse</li>
<li>Cut sponge cake in half</li>
<li>Pour chocolate mousse over bottom half of sponge cake in mould (acetate sheets, parchment paper or springform pan)</li>
<li>Refrigerate overnight to set (wrap top layer of sponge cake in plastic wrap to keep it fresh in the fridge)</li>
</ul><i>Day 2:</i><br />
<ul><li>Prepare whip cream topping</li>
<li>Place top half of sponge cake on top of chocolate mousse layer</li>
<li>Remove mould</li>
<li>Cover cake in whip cream topping</li>
<li>Decorate as desired</li>
</ul><br />

<br />
<center><b>VANILLA SPONGE CAKE</b></center><br />
<ul><li>3 eggs, separated</li>
<li>1-2/3 cups self-rising flour</li>
<li>1 teaspoon baking powder</li>
<li>1/4 cup unsalted butter</li>
<li>1/2 cup whole milk</li>
<li>1 cup confectioner's sugar, divided</li>
<li>2 teaspoons vanilla extract</li>
</ul><ol><li>Preheat oven to 350°F. Grease baking tin with softened butter. Coat with a light dusting of flour.</li>
<li>Separate the eggs when they are cold; place the whites in one bowl and the yolks in another. Cover with plastic wrap, set aside.</li>
<li>Cut the butter into pieces and place with milk into a microwave safe bowl, cover with a paper towel. Heat in microwave for 15 to 20 seconds, check to see if butter has melted and stir. Microwave for another 5 to 10 seconds and check and stir again. Continue to do this until the butter has melted. Add vanilla to mixture and then set aside to cool.</li>
<li>In a separate bowl, whisk the egg whites, gradually streaming in one half of the sugar, one-tablespoon at-a-time. Whisk until stiff peaks form, set aside.</li>
<li>In a separate bowl, beat the egg yolks while slowly streaming in the remaining sugar until the mixture reaches the ribbon stage (When the beaters are lifted, the batter will stream from the beaters forming a ribbon).</li>
<li>With the mixer on, in a slow steady stream, gradually pour the butter mixture into the egg yolk mixture and beat to combine.</li>
<li>Slowly mix baking powder and flour into the egg yolk mixture.</li>
<li>Using a large spatula, in two additions, gently fold in the egg white mixture until just combined.</li>
<li>Pour batter into the baking tin (no more than half-full).</li>
<li>Bake until light golden brown and top springs back when touched, 17 to 20 minutes.</li>
<li>Transfer to a wire rack to cool for 2 to 3 minutes. Remove cakes from tin and return to wire rack to cool completely.</li>
<li>Cut in half and use in assembly of cake.</li>
</ol><br />

<center><b>CHOCOLATE MOUSSE</b></center><br />
<ul><li>1-1/2 cups (70% cocoa content) dark chocolate, chopped or chips</li>
<li>1 cup heavy whipping cream</li>
<li>5 eggs, separated</li>
<li>6 tablespoons unsalted butter</li>
<li>5 tablespoons granulated sugar</li>
<li>2 tablespoons strong coffee</li>
<li>1 teaspoon vanilla extract</li>
<li>1/8 teaspoon cream of tartar</li>
</ul><ol><li>Melt the chocolate and butter in a double boiler or in a heatproof bowl over simmering water, stir occasionally until smooth.</li>
<li>Once melted and smooth, remove from heat and allow to cool slightly, 5 to 10 minutes.</li>
<li>In a separate bowl, beat together the egg yolks with the coffee and vanilla.</li>
<li>Slowly add chocolate mixture. (<em>At this point it may look like a seized mess but it will come together at the end!)</em></li>
<li>Refrigerate while you do the next steps.</li>
<li>In a clean bowl, whisk the egg whites with cream of tartar until it begins to get foamy.</li>
<li>Gradually pour in the sugar and beat till medium peaks form, set aside.</li>
<li>Whip the cream until medium peaks form, set aside.</li>
<li>Remove the chocolate mixture from the fridge and stir in a few tablespoons of the beaten egg whites to loosen the mixture.</li>
<li>Fold in the rest of the egg whites. (<em>Be gentle but thorough, you don't want to deflate the egg whites but you don't want to see too many white streaks in the mixture.)</em></li>
<li>Carefully fold in the whipped cream until no white streaks remain.</li>
<li>Use in assembly of cake.</li>
</ol><br />

<center><b>WHIP CREAM TOPPING</b></center><br />
<ul><li>8 ounces marscapone cheese</li>
<li>1 cup whipping cream</li>
<li>1 teaspoon vanilla extract</li>
<li>1/4 cup powdered sugar</li>
</ul><ol><li>Beat together all ingredients until firm peaks form.</li>
<li>Use in assembly of cake.</li>
</ol><br />

<center><b>DECORATING</b></center><br />
I melted chocolate and spread it on parchment paper. About 10-15 minutes into hardening, I scored the chocolate into long pieces. (If I were to do it over again, I would have made wider pieces.) After another 15 minutes, I broke the chocolate into the scored pieces and placed them in the fridge until they were ready to use. chevro poppers were created out of an attempt to find a diwali-friendly alternative to rice krispies squares. it's just peanut butter spiced with red chili powder, tumeric powder, ground coriander and cumin, and salt, then mixed with chevro formed into balls. pretty simple.. and it turned out pretty delicious :)<br />

i don't know how to make the standard gugara filling, so instead i made a chocolate alternative. <br />
<ol><li>toast almonds and walnuts</li>
<li>throw them into a food processor with chocolate pieces</li>
<li>mix in cinnamon and icing sugar</li>
</ol>the dough is the exact same as a traditional gugara. mum suggested i add a bit of cardamom in, which is a common spice for indian sweets. i would have, except i forgot to do that :S<br />

i was lucky for the boxes. the local <a href="http://www.michaels.com/" target="blank">michael's</a> had a scrapbook pad called <a href="http://www.stuff4scrapbooking.com/48-sheets-taj-mahal-paper-stack-12-x12-ps005042.html?CAWELAID=441783680" target="blank">taj mahal</a>. the pad was all cardstock which was great for boxes, and the patterns in the book were perfect for diwali.<br />

i didn't really think things through though. these labels can easily get ruined if some wet or messy fingers get on them. (already happened on the crushed red pepper jar with kiwi's pizza fingers..) i should have modge podge'd the labels before placing them on my containers. that would have at least made them easy to keep clean.<br />

romantic soles palisades. this was the perfect shoe since they had two little hearts underneath the sole. i had them sent to kiwi rather than paying the +$20 in duties to have them shipped straight to canada. kiwi received them and told me the shoes looked good, so i didn't think anything of it..<br />

a week before the wedding, saturday, kiwi and his family drove up from atlanta. they got in to mississauga pretty late, so dad and i went to their hotel to check to see how they were doing and if they needed anything. before leaving their hotel, kiwi gave me my box of stuff i ordered for the wedding, including my shoes! being the typical shoe-a-holic i am, i had to open up the box right there..<br />

"this is the correct shoe.." so here i sat with two different shoes. yes, kiwi didn't check BOTH shoes!! *sigh* i suppose i should have asked if he checked both when he got them.. OR asked to see them during one of our video chats, but anyway..<br />

in desperation, i could have worn the shoes for the reception hoping no one would truly realise the difference.. after all they're both silver, pointed toe, and the same height; only difference was one was shiny sparkles, the other was shiny sequins. i could pretend it's a new fashion fad coming out of europe or something, maybe? for the next minute or so i sat there holding the two different shoes, staring at them trying to keep from freaking out because it was not only kiwi that was there, but his entire family. it was at this point i noticed something else, "both these shoes are for the right foot." so really, i couldn't wear these shoes even if i wanted to.<br />

back home i went, with my mismatched, right footed shoes.<br />

i told her my story about the shoes. after explaining everything, i told her, "my wedding is this saturday.." she apologized profusely, probably knowing how crazy a bridezilla can get. she took down my information, told me they should be able to expedite a replacement shoe to canada or help me find an alternative pair if the one i ordered is no longer available. she said as soon as the systems are up she will call me or have someone else call if her shift is over. fair enough.<br />

i asked to speak with a manager regarding this situation because i wasn't quite satisfied with the answers i was getting. so i was transfered to a "manager". (sometimes i wonder if it's actually a manager and not a coworker at the same level..) i went over the whole situation. she told me the exact same thing as the customer service agent before: they can only expedite to the u.s. and they can only give a $35 credit. i told her that i understood if a completely different pair of shoes were sent, but this situation doesn't make sense - two different shoes for the same foot? she said, well it's been returned a few times already. a few times? so when an item is returned, prior to being restocked, shouldn't it be inspected to insure the RIGHT shoes are returned?<br />

(really, what else do i have to do with my time after marriage and jobless?) while perusing the dessert buffet at brunch , pops-in-law told me he really loved cheesecake. so of course i took note and decided to make a cheesecake.<br />

now i could be a good daughter-in-law and make a good ol' fashioned cheesecake with 4 pounds of cream cheese, 2 cups of sugar, and a gazillion gratifying calories, but it feels like everyone in the house is watching their weight AFTER the wedding. *sigh* so i found a sort of healthy recipe from the mmm.. lady: <a href="http://www.foodnetwork.com/recipes/giada-de-laurentiis/mango-cheesecake-with-basil-lemon-syrup-recipe/index.html" target="blank">mango cheesecake with basil lemon syrup</a>.<br />

of course i have problems following recipes to a tee.. so here are the changes i made on the fly:<br />
- biscotti crust? i did the standard graham cracker crust<br />
- whole milk ricotta cheese? i could only find skim milk ricotta cheese<br />
- mango puree? i used mango rus.. it's basically mango pulp, right?<br />
- sugar? i used 1/4 cup regular sugar and 1/4 cup splenda<br />

with all that was going on the day before pops-in-law's birthday, i was only able to make the crust and mix all the ingredients together. i put the mixture in the fridge for a few hours while we were out then baked it when we got home. i let it sit for a few hours in the fridge to set before we cut it. that kind of didn't help.. the cake was more mousse like than cheesecake. so it didn't really sit nicely in the plate. AND the cake was really sweet considering i only put 1/2 cup of sugar. maybe i shouldn't have added any sugar at all since the mango rus may have had sugar in it already.<br />

and then my crazy thoughts go wandering.. what if you incorporated your initials or (better yet) your logo INSIDE the cake, viewable in its entirety with every slice? hrmm..VERY expensive, but HUGE impact!<br />
<ul><li>it would have to be a square cake.. i can't see how it would be remotely easy to do with a round cake</li>
<li>you'd need a baker with very steady hands who knows how to essentially "sculpt" cakes</li>
<li>this would be hard to accomplish with an eggless cake because of its consistency</li>
<li>the initials/logo would have to fit in logs of 2 inches each to make it work</li>
<li>the baker would have to supply a cutting guide on the cake board so that the person cutting the cake doesn't completely destroy it</li>
<li>it would probably be the most memorable part of the wedding.. more so than the bride and groom!</li>
</ul>maybe after the wedding when i'm unemployed and stuck at home all day i can do some experimenting..<br />
